Imagine our surprise when during a little spring cleaning last year we unearthed decade's old hand scribed recipes from the founder of Pic-A-nut, James Champane Sr. The yellowed pages provided exact details for a unique roasting technique for several nut products - recipes long forgotten by family and former employeess to elderly to recall techniques.
Christmas 2005 marked the introduction of the limited edition nuts (Hand Roasted Private Reserve) infused with flavor and aroma using the newly patented "old" hand roasting process. Pic-A-nut loyalists and converts rejoiceed at the unique offering and the nuts have become the talk of cocktail parties.
This discovery revitaized the company but also gave customers a new reason to look at nuts as a true statement beyond the gift giving season.
The hand roasting process takes more then twice as long as the traditional roasting process and is more labor intensive. But there has been a steady rise in the demand for gourmet or high end offerings represented by our Premium Reserve line of products.
